How to Survive Living Off Campus

"Moving off campus is as big of an adjustment as moving on campus was when students were freshmen. Suddenly, there is cooking, cleaning and trying to find a parking space to worry about and plan. This guide will make life a little easier and help cause less stress.
First, parking does not always have to be a headache. If you choose to become a commuter student, remember to register for your parking permit online before coming to campus. This will save you and One-Stop time and effort. This year, parking passes are $84 and by registering online, the parking pass is mailed to whatever mailing address you desire. The $84 is charged to your student account and the pass arrives at your door after a 24-hour processing and mailing time. However, obtaining a parking permit requires more leg work after Aug. 1. You must go to the Parking Services Office or One-Stop, both on campus buildings, to receive your pass. You may still register online, but the permit will not arrive in your mailbox. After Aug. 19, only One-Stop will have parking permits to give.
Once you have your parking pass, know the lots you where you can park! Parking Services will boot your car with an ugly orange metal contraption that means “You cannot move until we say so” or a white fluttering ticket on your windshield that ruins any day. You might stand a chance of getting the ticket dismissed thanks to Student Government Association’s Traffic Court, but it is easier and quicker to avoid tickets and boots altogether. The Parking Services website has very detailed and insightful maps to make sure commuters, staff, faculty, on campus students and visitors park in the right areas every day of the week. If you are a commuter, learn the routes of the Cat-Tran so that you can safely park in a spot that may be a good walking distance from your classes but is safe from tickets or boots. Ride the Cat-Tran to your classes or put on some good walking shoes for a brisk walk to breathe in that fresh mountain air. Some students frown or make jokes about the Cat-Tran, but your tuition fees go toward the purple buses whether you ride them or not, so enjoy and partake in the campus transportation system. There is also an express route from the new Health and Human Sciences building to the back of the University Center this year. The route is specifically designed to get students from the Health building to main campus and back again in enough time to attend their classes on the separates campuses.
If you do not want to bring your car to campus at all, bicycles are a plus because there are several shortcuts across campus that you cannot use with your car. Many off campus apartments designed for students, like The Summit or Rabbit Ridge, are within easy biking distance to both main campus and the Health and Human Sciences building. Also, there is the Catwalk to safely cross Highway 107. Over the summer, a new crosswalk was built across the highway at the bottom of the hill of The Summit Apartments. Now, students can signal the stop lights to stay red for them to cross the streets without playing the most dangerous game of tag ever played.

In previous years, a shuttle ran to nearby off campus apartments on a loop every weekday. Students did not have to pay for this service, and it saved money on gas and parking permits. It was also less of a headache because you did not have to fight for parking spaces or arrive two hours early for class to make sure there was one left.
According to Jackson County Transit, who ran the shuttle, Western Carolina University did not renew their contract, and there will be no more off campus shuttle services through the Transit. However, Don Taylor from Cat-Tran told The Western Carolinian exclusively that the Cat-Tran is now responsible for the off campus shuttle service. They will follow the same route as Jackson County Transit, stopping at the same apartment complexes, said Taylor.
Dining is another huge issue for off campus students. There are two different commuter meal plans one can choose in order to save on groceries and washing dishes. The Commuter Declining Balance plan is $500 of DB points, which can be used at any dining location. The Commuter Block plan is 25 block meals to be used at the upstairs Courtyard Dining Hall throughout one semester plus $374 DB points to be used anywhere. This plan is helpful in that you are still able to eat with your friends upstairs with their on campus meal plans without using up your DB points.
If you run out of points or are not interested in eating upstairs at Courtyard, there are great places to get a meal or groceries in your local community of Cullowhee and Sylva.
Until October, the Farmer’s Market runs every Saturday morning in Sylva and every Wednesday evening in Cullowhee. Get the freshest, healthiest vegetables and even cuts of meat, cheese and fish from local farmers. Herbs, lettuce and other products can be found cheaper at the Market than at stores like Food Lion or Wal-Mart.
For snacks and bread products, try the Flowers Baking Company next door to Rae’s City Grill, previously The Bone Shack. Flowers is a bakery outlet and sells products at significantly lower prices like eight Nature’s Own hamburger buns for $.59 and loaves of bread for under $2 each. Shoppers can also find Blue Bird snack cakes, ketchup, honey, bags of chips, pies and other goodies for their pantries. Pick up a Customer Appreciation Card for more savings.
For other ways to save on groceries, browse the websites of Food Lion and Ingles to see what is on sale then add the coupon onto your MVP or Ingles Advantage Card online. Try not to fall into a routine of only stopping at one grocery store or another. Wal-Mart, Food Lion, Harold’s Supermarket in Dillsboro, Ingles and Sav Mor all have different sales going on during any given day, and by planning ahead, you can save more money and find better deals. If you and your roommates are planning on splitting the cost of groceries, shopping at Wal-Mart is not your best choice. Food Lion and Ingles provide deals like Buy-One-Get-One-Free and provide more discounts on family-sized products than Wal-Mart."

The Must List, July 15

This week's Must List has a little Christianity, a little book reading, and a little romance.

1. Bethlehem Baptist Church podcasts
I couldn't get by without these!! I still haven't found a church for me in my new community, but I can always rely on these podcasts. Rev. Dickie Spargo preaches nearly every Sunday at the church where I found the true meaning of Christ and through these podcasts, I never miss a sermon. They download directly to my iTunes every week. I would definitely, definitely recommend the "Why I..." sermon and my absolutle favorite "Marry Well" from September 2010.
2. Surprise flowers
Yesterday, I had a down day. I was consumed by this horrible mood swing that lasted all day. I got nearly nothing done and basically spent my entire time rebuilding my unhealthy relationship with my Instant NetFlix account. I sent Stuart a warning text that I was having a horrible day and that to bring home something nice would be very much appreciated. And, that boy delivered! I got a small Cherry Berry Chiller, Bojangles for dinner, sliced watermelon for dessert, and a beautiful, vibrant bouquet of flowers!!! :)
3. The Devil Wears Prada, the novel
I can't put this book down! It took me a few pages to get into it, but once I did... it's addicting!!! I even had a dream that I had an evil boss who called my cell phone constantly with absurd and rude requests on her behalf. You definitely want to read this. Then, go out and rent the movie even if you've already seen it.
4. Homemade pizza
Stuart and I made homemade pizza the other team, and it was DELICIOUS!! Get yourself a can of Pillsbury pizza dough in the refrigerated section, mozzarella cheese, whatever toppings you want, and sauce. Since the official "pizza sauce" is usually too sweet, Stuart tried our usual spaghetti sauce: Ragu Robusto! Parmesan & Romano. It's the perfect spaghetti sauce, and I say that with the full knowledge that Stuart enjoys it and he knows that it comes out of a can. Still, I was skeptical that it could work as a pizza sauce, but hey...  it did! It had a familiar taste with a restaurant pizza that I can't place. Success!
5. A-Team on DVD
Both Stuart and I were skeptical about the quality of this movie, but once again, Liam Neeson didn't let us down!! It was incredibly witty, intense, action-packed, and surprisingly intelligent. Even Stuart had very few criticisms about the weaponry use and tactics that occurred on-screen. Check it out!!
6. Wii Sports Resort game
This is the latest purchase Stuart and I plan to make!! Our choices of Wii games have grown a bit stale, and two of them cannot be played by more than one person, and one has games that are only single player as well. So, we have decided to pool our money together for the action-packed, intensely fun, and gets-you-off-your-butt game of Wii Sports Resort!! We haven't been this excited about spending money since purchasing a hamster... and I do believe that excitement was mostly one-sided. But seriously, how can you not be excited about a video game that lets you throw a Frisbee to a dog? That's just awesome!! Stuart and I desperately want a dog, and here's a video game that lets us have one for as long as we want to play without making our landlord upset. Plus, archery!!! WOHOO! Seriously, we're excited!! Wii party at our place!

Yes, I twisted Stuart's arm to do this, but he announced at the dinner table that he would like to do more videos in order to show the viewers of YouTube that it is possible to not only cook at home but to afford these types of well-balanced meals. We Stuart did the math and discovered that my meal, which consisted of chicken thighs, apple sauce, a piece of garlic toast, and a baked potato, cost under $4. Stuart's meal was under $3.

It's been an insanely busy week at the newspaper and on my social calendar, so I'm a bit out of breath and run down. Today is a bit of a relaxing day, but I still have a couple of articles left to write - both of them huge, important, way-too-many-facts ones.
So, I thought: here's a picture of Kate making a Kate Face. Here, she is listening to a story that Stuart is telling about baking brownies while washing the dishes (even though it was Stuart's turn to do them). I've seen this face enough times to know that this is her: "OMG THAT SOUNDS SO DELICIOUS!! I WANT TO EAT IT NOW!!" But, there's no way I could copy it myself.

To celebrate our 6-month anniversary, I decided to cook dinner for Morgan. Now as all of you know, I can't cook! Morgan definitely can. So I went to a friend and asked for a recipe I was sure I could make: chicken Parmesan.
It started out great until I realized I forgot the Shake n Bake breadcrumbs. But we made it work. The major problem came after we ate. Both of us, me more than him with my overly sensitive stomach, got very sick afterwards! The marinara sauce as bland as it was did not agree with either of us!!!
Well at least it looks great!! And the stuffing was good too! ....I ain't cooking again!

Distance Traveler's Girlfriend Part 2

I identify with this passage a lot, mostly because it is about Henry (that would be Morgan) teaching Clare how to cook for the times when he's gone (that would mostly definitely be me!!). But I also like it because of the last resounding statement at the end of the passage.

"CLARE: Henry holds up an onion and looks at me gravely and says, "This... is an onion."
I nod."Yes. I've read about them."
He raises one eyebrow."Very good. Now, to peel an onion, you take a sharp knife, lay the aforementioned onion sideways on a cutting board, and remove each end, like so. Then you can peel the onion, like so. Okay. Now slice it into cross-sections. If you're making onion rings, you just pull apart each slice, but if you're making soup or spaghetti sauce or something you dice it, like this..."
Henry has decided to teach me to cook. All the kitchen counters and cabinets are too high for him in his wheelchair. We sit at the kitchen table, surrounded by bowls and knives and cans of tomato sauce. Henry pushes the cutting board and knife across the table to me, and I stand up and awkwardly dice the onion. Henry watches patiently. "Okay, great. Now green peppers: you run the knife around here, then pull out the stem..."
We make marinara sauce, pesto, lasagna. Another day it's chocolate chip cookies, brownies,creme brulee. Alba is in Heaven. "More dessert," she begs. We poach eggs and salmon, make pizza from scratch. I have to admit that it's kind of fun. But I'm terrified the first night I cook dinner by myself. I'm standing in the kitchen surrounded by pots and pans, the asparagus is overcooked and I burn myself taking the monkfish out of the oven. I put everything on plates and bring it into the dining room where Henry and Alba are sitting in their places.Henry smiles,encouragingly. I sit down; Henry raises his glass of milk in the air: "To the new cook!" Alba clinks her cup against his, and we begin to eat. I sneak glances at Henry, eating. and as I'm eating, I realize that everything tastes fine.
"It's good, Mama!" Alba says, and Henry nods."It's terrific,Clare," Henry says, and we stare at each other and I think, Don't leave me."
